Saag Aloo

If you’re looking for fast and simple comfort food, this is it. Saag Aloo is a dry curry made with potatoes and leafy green vegetables such as spinach, broccoli and/or kale. My recipe uses maris piper potatoes and baby spinach leaves and has a shorter cooking time compared to a traditional saag dish. Mindful of how busy our lives get with work, home, kids, pets, it’s handy to have an alternative that’s quick and just as tasty.

We had this with chapatti, plain yoghurt and Indian pickle; it was delicious. If you really want to push the boat out however, why not try these with masala puri.

Ingredients
  

  • 2 Maris piper potatoes (medium)
  • 120 g Baby spinach leaf
  • 3 Curry leaves
  • 1 tsp Mustard seeds
  • â…“ tsp Turmeric
  • ½ tsp Coriander powder
  • ½ tsp Cumin powder
  • ¾ tsp Salt
  • 6 g Ginger (grated)
  • 2 Cloves garlic (finely chopped)
  • 1 Green chilli (finely chopped)
  • Fresh coriander leaves as garnish
  • 4 tbs Tin tomatoes (blended)

Instructions
 

  • Peel and wash the potatoes. Slice them into semi circles. Wash the baby spinach leaves and chop. Grate ginger and chop garlic.
  • In a sauce pan heat 2 tbs of oil. Once hot, add mustard seeds. As they start to pop, add curry leaves. Let this sizzle for a few seconds.
  • Add potatoes, garlic, ginger, salt, turmeric, ground coriander, ground cumin and green chilli. Mix the ingredients and coat the potatoes with the spices.
  • Mix in the chopped spinach leaves and stir. Let this cook for a few minutes with the lid on until the spinach wilts and softens..
  • Blend tin tomatoes and stir into the curry. Cover with the lid and let this cook for a further 10 minutes or so until the potatoes are cooked.
  • Garnish with coriander

Tips for making Saag Aloo

  • Cook this in a non stick sauce pan with a lid and on a medium heat. It’s important not to rush the cook time and to let the potato sauté.
  • I like to use a wide pan to ensure the ingredients are spread out to give it an even cooking time.
